Recipe for Red Velvet Cake

Hello All, 

So, I found this recipe on Food Network.com and I am not sure what to think of it. It sounds amazing, and I have not had a chance yet to make it, but it is completely different than the usual Red Velvet Cake. It is one of Paula D's recipe's (which are usually pretty good) so I'm sure it taste good. My only concern is that the recipe calls for almonds, and my Aunt does not like nuts in her food. Thus, it may not be the perfect recipe for us. 

Here is the recipe:

Ingredients

Cake:

  • 2 cups sugar
  • 1/2 pound (2 sticks) butter, at room temperature
  • 2 eggs
  • 2 tablespoons cocoa powder
  • 2 ounces red food coloring
  • 2 1/2 cups cake flour
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 tablespoon vinegar

Icing:

  • 1 (8-ounce) package cream cheese
  • 1 stick butter, softened
  • 1 cup melted marshmallows
  • 1 (1-pound) box confectioners' sugar
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Directions

Preheat oven to 350 degrees F.
In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.

Icing:

Blend cream cheese and butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Spread between layers and on top and sides of cooled cake.

Red Velvet Cake from Costco

I think I had forgotten how good the Red Velvet Cake from Costco is.

So I had an amazing birthday and it was made even better by this cake. I highly recommend you  go get one for yourself, but until you do, here are my thoughts on it:


    • The cake was moist, and melted in your mouth.
    • The cream cheese frosting was smooth, and was just the right amounts all around the cake.
    • It has kept well in the fridge (again let it come to room temp before eating) and I can't wait to have another slice tonight!
Compared to the Publix cake, this one wins- no questions asked. While there is nothing wrong with the Publix cake, the Costco one was just better in everything. I think the main difference is the actual cake. Costco's had much more texture and was less dry. Publix's tasted like any cake and dried out fairly quickly once it was put in the fridge. Also, I did say that the Publix cake had the right amount of cream cheese frosting in between the layers of cake. However, the Costco cake had the right amount of cream cheese over the entire cake, including in between the layers. The Costco Red Velvet Cake is simply yummy. 

I think Costco's was less expensive, which is always nice.

Red Velvet Cake from Publix Bakery

Hello Again,

So I know I mentioned that today is my birthday and I would be talking about the amazing Red Velvet Cake from Costco. However, before I have my cake late tonight and then blog about it I want to first mention another cake I had this week. In celebration of my Aunt's birthday we had a Red Velvet Cake from Publix Bakery. Here are my thoughts on it:



    • The cream cheese frosting is fairly good, though isn't as creamy as I would like
    • The cake is decent, a tad dry
    • I did like the amount of cream cheese frosting in between layers of cake- just enough
    • The cake did last for several days and was still good. Just take it out of the fridge and let it sit for a few minutes on the counter.
Overall, the cake was good. From what I can remember though, the cake from Costco is better, I'll be sure to have a blog about it up soon. 

I am still on the hunt for recipes, does anyone have any suggestions on good places to look?

The Search Begins

Hello!

I have started this blog for the purpose of finding the best Red Velvet Cake in the North Atlanta area. My Aunt and I both have a deep love for Red Velvet Cake and have been searching for the best one for some time now. I plan on tasting Red Velvet Cakes from several different locations over the next week and blogging about each one. I hope this will give some insight to readers on the pros and cons of the Red Velvet Cake in the area. I would love to know if anyone has his or her own personal favorite, so please don't hesitate to share.

I have also wanted to find a recipe for an amazing Red Velvet Cake. I have not attempted to bake one, but I will be on the search for some recipes and will be sure to share them here. Making the cake would be a rewarding experience to be sure.

And lastly, my birthday is this coming Saturday and I always ask for a Red Velvet Cake. I am hoping that it is one from Costco as they have the best Red Velvet Cake I have had to this day. I'll be sure to post pictures of it and tell you all how good it is!
